#6 – Dictador XO Insolent (Rum Howler Top 100 Spirits)

Dictator’s solera aging system is a cascading process where younger rums are aged in oak casks and then blended with older rums. The aged rum are arranged in different flights with the oldest distilled rum on the lowest levels of the Solera. The younger rums are placed on the upper levels with the very youngest rums at the top. As the rum is pulled from the lowest barrels for bottling, the barrels are not fully emptied, and those barrels (about half full) are then topped up with rum from the levels just above. This marrying of old and new softens the fiery younger rum and provides the final blended rum with a refined smoothness and flavor not found in ordinary rums.

For the Dictador XO Insolent in particular, the aging barrels used are pre-used oak barrels which have a significant percentage of oak obtained from Jerez Spain, as well as pre-used Port Wine Barrels. Near the end of the aging process, the barrels earmarked for the XO Insolent Rum are emptied (and the rum stored of course), and these barrels are subjected to an open flame process which caramelizes the rum soaked oak fibres on the interior of the barrel. These barrels are then refilled with the same rum allowing the spirit to draw the sweet caramelized flavours from the interior of the oak barrel.

#6 – Dictador XO Insolent

“… simply luscious with sweet toffee smells rising from the glass tainted with impressions of butterscotch, vanilla, corn syrup, creme de brulee, maple syrup and peanut brittle. There is a backbone of firm oak sap and spice melded wonderfully into these sweeter butterscotch like aromas with delectable baking spices (cinnamon, nutmeg and cloves) and hints of milk chocolate lying underneath …”

#83 Dictador 12 Year Aged Solera Rum

Dictador 12 SAM_1388A unique feature of the Dictador Solera System is that in addition to the younger rums being married with older rums, the barrels of similarly aged rums along one level of the solera are periodically consolidated to keep the barrels as full as possible to maintain fuller contact with the wood, and to inhibit the acceleration of the evaporation within the barrels. The Dictador 12 Year Old Rum, is a solera aged rum which is taken from the solera at the point where the average of the rum within that solera row is at least 12 years of age.

#93 Dictador 20 Year Old Solera Rum

Dictador is produced in Colombia on the Caribbean coast at Cartagena de Indias City. Rather than being produced from molasses, the rum is produced from the virgin honey of sugar cane which has been distilled upon a stainless steel alembic, and aged using Dicatador’s unique take on the solera-style aging system. Although the rum is produced upon a stainless steel alembic, the inner workings of this still contain more than enough copper such that it functions in basically the same manner as a copper pot still.

Dictador 20 SAM_1387Interestingly, the choice of the distillery to use sugar cane honey rather than molasses is based upon a peculiarity of Colombian government policy. It seems that the country has mandated that automobiles in Colombia must use a certain percentage of biofuels in conjunction with gasoline as their fuel source. As molasses is the most readily available source of biofuel, almost all molasses produced in Columbia is earmarked for biofuel production. This means that the folks at Dictador Rum have little choice but to produce and use their own sugar cane honey for rum production.

The Dictador 20 Year Old Rum, is a solera aged rum which is taken from the solera at the point where the average age of the rum within that solera row is at least 20 years of age.  (Some older rum is certainly within those barrels as well.)

“… The aroma from the glass is heavily tainted with oak and baking spice. I smell dark brown sugars and toffee which grow stronger and deeper as the glass decants. A hint of maple sits in the breezes, and accents of cinnamon, nutmeg as well as a firm dash of vanilla rise up to complement the strong oak aroma. There is a light smokey element as well which seems to imply sherry like scents of dried currants and raisins …”

The 2014 Rum Howler Rum of the Year: Dictador XO Insolent Rum

rum_howler_badge-2014This past May, I was invited by Thirsty Cellar Imports, to attend a Rum Master Class hosted by Hernan Parra Arango, Rum Master for Dictador Colombian Rum. At the event, the attendees were given the opportunity to taste the entire Dictador line-up which of course included not only the Dictador 12 Year and the Dictador 20 Year Solera Rums, but we also tasted and learned about the Dictador XO Perpetual and XO Insolent Rums.

At that Rum Master Class, I learned that for the Dictador XO Insolent in particular, the aging barrels used are pre-used oak barrels which have a significant percentage of oak obtained from Jerez Spain, as well as pre-used Port Wine Barrels. Near the end of the aging process, the barrels earmarked for the XO Insolent Rum are emptied (and the rum stored of course), and these barrels are subjected to an open flame process which caramelizes the rum soaked oak fibres on the interior of the barrel. These barrels are then refilled with the same rum allowing the spirit to draw the sweet caramelized flavours from the interior of the oak barrel. The final rum is blended and barreled at 40 % Alcohol by volume.

Of course the proof is in the tasting, and this year, the Dictador XO Insolent Rum was the very best that I personally tasted in 2014.

The Dictador Insolent Rum is full of sweet and spicy character, and just might be as close to rum perfection as I have tasted. It is one of those rare spirits which I am loath to mix into a cocktail, and from me, that is high praise indeed!

Rum Howler 2014 # 16 Rum – Dicatador 12 Year Solera

“… . The initial nose is very pleasant, full of rich baking spices which include a brown sugary toffee rising from the glass as well as cinnamon, and vanilla. There is a light accent of marzipan which reminds me of toasted almonds and charred marshmallow. I also sense fresh and dry fruit and a complex oak profile that is firm but not too strong …”

I am even more impressed now, than I was when I received my first taste of several of the Dictador 12, a few years ago.  I have been told by the producers of this rum that the average age of their 12 Year Solera Rum has increased by a few years since it was first introduced, which perhaps explains why its score has crept up in this most recent review. The Dictador 12 Year Solera is a complex rum full of oak nuances and dry fruit which achieves a full flavour while maintaining proper balance and complexity.

Rum Howler 2014 #20 Rum – Dictador 20 Year Old Solera

Dictador is produced in Colombia on the Caribbean coast at Cartagena de Indias City. Rather than being produced from molasses, the rum is produced from the virgin honey of sugar cane which has been distilled upon a stainless steel alembic, and aged using Dicatador’s unique take on the solera-style aging system. Although the rum is produced upon a stainless steel alembic, the inner workings of this still contain more than enough copper such that it functions in basically the same manner as a copper pot still.

” … I would suggest that oak and caramel dominate the rum, but in spite of the age of the rum, (which is apparent on the nose), the oak flavours do not attack you with sharp tannins and citrus zest. Instead, The oak flavours have melted into the caramel like flavours and appear to the palate as a yummy oak and caramel syrup that carries hints of other the flavours within it …”

The Dictador 20 year Old Solera Blend is extremely well crafted and balanced. I enjoyed how the differing flavours melted together with the caramel and oak. This is a suave, yet rich rum experience!

Gin and Tonic Challenge – Dictador Ortodoxy and Tonic

Ortodoxy and tonic SAM_1248Dictador Ortodoxy Aged Gin is the result of the passion of former President of Dictador, Dario Parra, who had during his many travels in the United Kingdom developed a tremendous love for gin. Dario studied many gin recipes and when he arrived back home in Colombia he developed a gin for his own personal use, utilizing traditional ingredients in conjunction with berries and botanicals native to Colombia. Dario Parra’s passion resulted in the creation of two aged gins which are now sold internationally, Dictador Treasure, and Dictador Ortodoxy.

Dictador Ortodoxy has been constructed to have a traditional, or orthodox, flavour profile which will be familiar to gin enthusiasts. This gin is produced from sugar cane alcohol which is distilled 4 times to 96 % alcohol by volume. During the 5th distillation each botanical is macerated and distilled separately before being blended. The blended gin is then aged for 35 weeks in previously used rum barrels, and then filtered clear to be bottled at 43 % alcohol by volume.

When I reviewed this gin earlier in the summer, I admitted to being blown away by how it performed in a standard G & T cocktail. It should not be surprising then, that the Dictador Ortodoxy and Tonic has received a very high score in this competition, in fact with only a few more gins to go in my challenge, it has rocketed to the top of the pack being the first gin to score in the 90’s!

The G&T Score for the Dictador Ortodoxy Aged Gin, based on my standard G & T cocktail is an outstanding 91/100.

Review: Dictador Ortodoxy Aged Gin

At the event, the attendees were given the opportunity to taste the entire Dictador line-up which included not only the fantastic Dictador Rums, but also two unique Colombian premium aged gins.

These premium gins are the result of the passion of former President of Dictador, Dario Parra, who had during his many travels in the United Kingdom developed a tremendous love for gin. Dario studied many gin recipes and back home in Colombia he developed his gin for his own personal use, utilizing traditional ingredients in conjunction with berries and botanicals native to Colombia. The subject of this review is Dictador Ortodoxy Aged Gin, which as the name implies has been constructed to have a traditional, or orthodox, flavour profile which will be familiar to gin enthusiasts. This gin is produced from sugar cane alcohol which is distilled 4 times to 96 % alcohol by volume. During the 5th distillation each botanical is macerated and distilled separately before being blended. The blended gin is then aged for 35 weeks in previously used rum barrels, and then filtered clear to be bottled at 43 % alcohol by volume.

“… The initial breezes from the glass bring forward light juniper and alpine forest scents with a touch of cotton candy whispering in the background which gives the air above the glass a lovely hint of sweetness. This aroma seems gentle and relaxed as there are also enticing floral accents with hints of citrus zest and lemon balm …”

Of course I have added a few recipes for your enjoyment, a Gin and Tonic, and a Grapefruit Martini. Both are absolutely great with Dictador’s Ortodoxy Aged Gin!

Top 30 Rums Countdown # 15 – Dictador 12 Year Solera

Top 30Dictador_12yearsI was first introduced to the Dictador Rums when I convinced the local distributor to drop in on one of the monthly gatherings of my Rum Club. Two bottles of the new Dictador Rum (The 12-year-old and the 20-year-old) were brought to the club for us to taste and provide feedback. Later I also sampled the Dictador rums in Miami, at the Rum Festival. Both times I remember being taken in by the Dictador style and the rich vibrant rum inside the bottles. So far I have tasted and reviewed only three of the Dictador bottlings, the Perpetual XO, the 20 Year Old, and of course the Dictador 12 Year Old. It speaks to the quality of manufacture that all three have landed in my Top 30 Rum Countdown:

 

# 15 – Dictador 12 Year Solera

“… A yummy marzipan which reminds me of toasted almonds smothered in roasted marshmallows is nestled nicely under the oak and spice.  A touch of coffee, a hint of ripe cherry, and more charred flavours  (perhaps some toasted coconut) seem to arrive at the end with a sherry-like smokiness which also brings nuances of dry fruit and cocoa to the fore…”

The Dictador 12 Year Old Rum is a solera aged rum with the oldest rum in the bottle being at least 12 years of age. It is bottled at 40 % alcohol by volume in a stylish black 700 ml bottle.
