On February 7, 2019 the LCBO (Liquor Control Board of Ontario) launched 7 Walsh Whiskey brands in LCBO Whisky Shop. I was sent a media kit from Woodman Wines & Spirits who represent Walsh Whiskey interests in Ontario. This kit contained 6 of the Walsh Whiskey Brands for me to taste, and I have decided to publish a timely series of reviews introducing several of Walsh Whiskey Spirits during the LCBO launch and running through to St. Patrick’s Day.
Bernard and Rosemary Walsh began producing their own independent Irish Whiskey brands in 2007 with the introduction of The Irishman 70 (aka The Irishman Original Clan in the USA) and The Irishman – Single Malt. In 2009 they expanded the portfolio with the introduction Writers Tears, a boutique brand which was created to bring additional nuance to the Irish Whiskey Category.
The subject of this review, Writers Tears Red Head Single Malt Irish Whisky, is a triple-distilled single malt spirit matured in Spanish butts which were previously seasoned with Olorosso sherry. The Sherry butts impart both flavour and a coppery orange hue which has given rise to the name of the Whiskey, ‘Red Head’.

Nicholas Kosevich and Ira Koplowitz come from a hospitality background. Prior to forming Bittercube they bartended and managed at the Town Talk Diner (Nicholas) in Minneapolis and The Violet Hour (Ira) in Chicago. Nicholas and Ira began producing Bittercube Bitters in 2009. Their company (based in Milwaukee, Wisconsin) started by making one gallon batches with real botanicals. Although the batch size is now 210 gallons the handmade process has stayed largely the same as they source botanicals as close to origin as possible to create densely flavored bitters. Bittercube Bitters became available commercially in July, 2010. Today the bitters are found in nearly 30 states and abroad in Canada, Italy and Australia.
Dixon’s Distilled Spirits is located in Guelph Ontario. This small distillery produces two brands of Vodka (Silvercreek and Flaming Caesar), two styles of Wicked Gin (a Licorice Botanical Blend and a Citrus Botanical Blend), as well as a ready to drink mix called Gin Fusion.
Recently (February 7, 2019), Ontario’s LCBO Whisky Shop launched a 7 brand Walsh Whiskey feature which included the 2018 bottling of The Irishman Cask Strength Whiskey. The 2018 version is dubbed The Irishman Vintage Cask 2018 (Irish Whisky).
According to their company website Fee Brothers has been a family business since 1864, and is currently now owned and operated by the fourth generation of the family to do so, Ellen and Joe Fee. The company currently produces about 100 different products including an impressive line-up of Cocktail Bitters,
