Review: Siempre Exclusivo Vivo Blanco Tequila

Last week I reviewed one of Siempre Tequila’s Rebel Casks (The Northern Gold Series aged in Maple Syrup Casks), and I mentioned at the time that I would soon add my review for the Siempre Exclusivo Vivo (Blanco) to the website as well. This week I fulfill that promise as I have competed my tasting sessions and compiled my notes into this review.

Siempre Exclusivo Vivo was produced at Feliciano Vivanco y Asociados, S.A. de C.V. (Nom 1414) by Master Distiller, Sergio Cruz using a distillation technique that reflects an old Hispanic-Peruvian method of distilling wild yeast while the yeast is still living and fermenting. In addition to utilizing what has up to now been a lost distillation technique, the Tequila Master plays classical music (Mozart) during the fermentation.

Review: Siempre Exclusivo Vivo Blanco Tequila

“… It is a soft warm agave that greets the breezes and tantalizes my nostrils. There is a gentle sweetness and a light effervescent quality that suggests that this is going to be suave and easy to sip. Bits of peppery spice combine with a mild green mint and light citrus zest relaying a sense of sophistication and polish …”

Review: Siempre Rebel Cask Northern Gold Series

Recently, I received a new tequila sample from Siempre Tequila, namely Siempre Rebel Cask Northern Gold Series which is a Limited Edition reposado. Siempre’s Rebel Casks explore tequila flavours which result from maturation in specific types of oak barrels which are off the beaten path of the ex-bourbon barrel. These are small bottlings, limited to only a few barrels produced each time.

Siempre Rebel Cask – Northern Gold Series has a Canadian twist as it has been aged for 8 months in a bourbon barrel which had previously been used to age Canadian Maple Syrup.

“… I notice a light agave sweetness rising into the breezes followed by somewhat mild but peppery spice with hints of vanilla. The agave gains strength as I nose the glass; but it has been softened by the light sweetness of maple. There is a light build-up of heat as the agave spice slowly releases itself from the light maple sweetness. This is not aggressive nor at this point does it seem overly complex; however it is soft and inviting me to sip …”

Review: Siempre (Plata) Tequila

Siempre is a new tequila brand owned by Monica Sanita and Alex Lecroix. The spirit they created has been available in the Ontario market for about 6 months and after gaining some recognition they are beginning to expand into Alberta, Quebec, California and Nevada (this coming September).

According to my correspondence with Alex, this is an ultra premium tequila produced in Tequila, Mexico from 100% Blue Weber agave. Interestingly this Plata spirit is a product of both highland agave, and lowland agave (in equal measure). In the production of tequila, highland agave brings strong fruity citrus notes and a little hot pepper into both the delivery and in the finish. Lowland tequila brings firm earthy flavours of the agave fruit into the flavour profile. Siempre Tequila, it would seem, attempts to bring the best of both agave worlds to the tequila aficionado.

“… I sense a duality in the glass as the earthy qualities of the lowland agave seems to be roughened by black pepper and hints of orange peel. The breezes above the glass hint at additional impressions grilled pineapple, mushy banana and green pepper corns. As I am enjoying the aroma, I begin to notice light herbal impressions as well, a hint of heather and light green grass and a dab of mint or menthol …”
