Review: Last Straw Distillery Stout Spirit

The Last Straw Distillery is Ontario’s smallest production micro-distillery located at 40 Pippin Rd. in Vaughan, Ontario (a wee bit north of Toronto) just off Highway 400 and around the corner from Vaughan Mills Shopping Centre. According to Mike Hook, the team at Last Straw Distillery come to the craft of distilling from a variety of different backgrounds, and surprisingly none have had prior experience in the beverage or alcohol business. They are self-taught, and developed their recipes in house, through research, and trial and error, without the use of outside consultants.

Last Straw Distillery’s Stout Spirit is the result of their second collaboration with Vaughan’s Lake Wilcox Brewing Co. made from the distilled essence of their powerhouse Irish Stout. This brew was mashed at Lake Wilcox and then fermented a full two weeks at Last Straw, then double-distilled, and finally aged for four months in a charred American oak cask which was re-coopered for them by their friends at DRM.reCoop in St. Catherines, Ontario.

“… There is a malty sweetness rising from the glass with indications of butterscotch and hints of corn syrup dipped graham wafers. Vanilla, barley, and almond seem to meander into the breezes along with some grassy menthol …”

Review: Clément Premiere Canne Rhum

Clément Agricole Rhum has been produced on the Isle of Martinique since 1887. Although the agricole  Rhum is distilled at the Simon Distillery, the rhum is finished at Habitation Clément (built on the site of a former sugar refinery) which was purchased by Homére Clément in 1887.

Clément Premiere Canne Rhum is produced from from the distillation of fresh pressed sugarcane juice whose terroir is exclusive to varieties of sugarcane from Habitation Clément. The distilled rhum rests for just over nine months in a stainless steel vat and is then slowly brought to bottling proof (40 % abv) with distilled volcanic spring water.

“… The breezes above my glass indicate a veritable smorgasbord of scents and smells. I am reminded of a fragrant new-make scotch except that this is much more refined. Alongside a ripple of sweet cane, there are clean citrus spices, fresh flowers, hints of yellow apples and even hints of dark plums and cherries …”

Review: Clément V.S.O.P. Rhum

Rhum Clément VSOP begins its maturation in the cellars of Habitation Clément in new French oak barrels. After a period of at least 1 year in these smaller french barrels, the rum is then transferred to larger re-charred Bourbon barrels for another 3 years. The final spirit is bottled at 40% alcohol by volume.

“… The breezes above the glass contain a combination of fine oak spice accented with woodier cedar notes. There is some butterscotch toffee, hints of maple, bits of dried raisins, and indications of both orange peel and orange marmalade in the breezes. Hints of cinnamon and ginger can be found as well as a light wisp of vanilla …”

Review: Dixon’s Silver Creek Vodka

Dixon’s Distilled Spirits is located in Guelph Ontario. This small distillery produces two brands of Vodka (Silvercreek and Flaming Caesar), two styles of Wicked Gin (a Licorice Botanical Blend and a Citrus Botanical Blend), as well as a ready to drink mix called Gin Fusion.

According to Dixon’s website, Dixon’s Silver Creek Vodka is:

Distilled from Canadian corn and hand-bottled with pride. Carbon filtered for a pure, smooth taste with delicate notes of citrus and pear and with a bready undertone. Perfect on its own, on the rocks or in a martini.

“… When I brought the chilled glass to my nose, I found the aroma was clean with only very light scents of starch flour and grain spice. However, when I took a small sip I was taken aback by a light but firm metallic taste and an unfortunate vegetal quality. I could also taste a mild sweetness, some grainy spice and an impression of mojito mint …”

Review: Cockspur VSOR 12

Cockspur VSOR is the most premium rum brand produced by Cockspur. According to the company website:

We find it hard to do anything halfway. So when we make our Very Special Old Reserve blend, we really go all out. We wanted it to be rich, have a great body, a nice smell, an exceptional taste and leave a nice feeling in your mouth. It was not easy, but we managed to get it done. This well-aged, premium rum has it all – a beautiful mahogany colour, a lovely toffee, vanilla and oak aroma, a taste suggestive of bourbon and vanilla and a warm oak aftertaste. Yes, it is hard work and takes time… but it is worth it

The rum is produced from molasses and aged in American Oak at the Cockspur facilities in Barbados. According to information presented to me several years ago, both column still and pot still rums are used in the premium rum’s production.

“… The rum looks dark and rich with the enticing scents a of treacle, molasses, baking spices (vanilla, cinnamon and cloves), and roasted walnuts. There are hints of bourbon and corn as well which are probably due to the American Oak aging barrels used to mature the rum …”
