The Diamond Distillery sits on the East Bank of the Demerara River near Georgetown, Guyana. The Distillery, originally attached to the now closed Diamond Sugar Estate, is home to Demerara Distillers Limited (DDL).
According to the El Dorado Website, the El Dorado 5 Year Cask Aged Rum obtains unique character comes from the blending of traditional aged rums from the Uitvlugt Savalle Still and one of the most famous Coffey stills in the entire world, The EHP Wooden Still or Wooden Continuous Coffey. In my past writings I have stated that I consider the EHP Wooden Coffey Still to be one of the Great Wonders of the Rum World. It was constructed in 1880 at the Enmore Estate (over 130 years ago), and it continues to operate at the Diamond Distillery today.The use of these ancient stills ensures that the Demerara Rum produced at DDL’s Diamond Distillery is unlike anything produced anywhere else in the world. The Year Old Special Reserve Rum is blended from aged stocks (the youngest being no less than 12 years old) from the original Wooden Enmore Coffey still, the original metal Diamond Coffey still, as well as from the ancient Port Mourant double wooden pot still which was used to produce ‘navy’ rum for the English Admiralty. All of the Demerara Rum produced by El Dorado is aged exclusively in American oak (bourbon barrels).
The El Dorado Dark Rum is part of Demerara Distillers‘ superior range of El Dorado rums which also includes the Superior White Rum, and the Superior Gold Rum. These are the youngest rums in the El Dorado Range and each would be aged up to two years in American Oak barrels before being blended and bottled at 40 % alcohol by volume. The Eldorado Dark rum is a traditional Dark Rum. This style of rum achieves a portion of its flavour, aroma, and colour from whatever special ingredients (caramel, molasses, et cetera) are added to the blend prior to bottling. Dark rums remain very popular throughout the world because of the full rich flavour profile which is their trademark characteristic.
The DDL Master Blender is credited with the creation of El Dorado 21-Year-Old Rum which uses a blend of rums selected from their world-famous stills, the Enmore (wooden Coffey still), the Versailles (single wooden pot still), and the Albion (Savalle still). All of the rums in the blend have been aged in oak for a minimum of 21 years, making this one of the oldest production rums in the world.
