Review: Herencia de Plata (Reposado)

Herencia Tequila is a 100% Blue Weber Agave Tequila produced by TEQUILAS DEL SEÑOR, S. A. DE C. V.,  a mid-sized, fourth generation family company located in Guadalajara, Jalisco, Mexico. The company was founded in 1943 and currently produces a number of tequila brands which include, Reserva del Señor, Sombrero, Tekali, Herencia Histórico, and of course Herencia de Plata.

The word ‘Herencia’ is apparently related to the english word ‘heritage’, and indeed, the Herencia de Plata has an impressive heritage. The tequila has been served by Mexican President, Vicente Fox to Queen Elizabeth II; it has won awards internationally, and it was originally produced to commemorate wedding of Juan Garcia, the son of the of the company founder, Manuel Garcia.

“… The agave spirit is rather clean and crisp. The typical flavours one expects in tequila, a somewhat earthy herbaceous agave, orange zest and lime citrus, and a squeal of white pepper are all combined in a crisp, sharp, but pleasing combination. There are hints of almond and perhaps a touch of marzipan lying under the spicier pepper and citrus. My imagination may be playing tricks on me, but I believe I also taste ripples of pineapple and spearmint playfully hiding in the back of the palate as well …”

Review: Wayne Gretzky No. 99 Red Cask

The Wayne Gretzky Distillery had its grand opening this past June (on the weekend of the 9th, 10th and 11th). The new 23,000 square foot facility (a cooperative effort between Andrew Peller (Wines) LTD. and the Great One himself, Wayne Gretzky) was constructed over two years and includes both a winery and a distillery as well as tasting areas and barrel aging cellar.

Prior to the grand opening, the distillery released its first Canadian Whisky, Wayne Gretzky No. 99 Red Cask Canadian Whisky.

According to the Wayne Gretzky Estates website information:

”  Wayne Gretzky No. 99 ‘Red Cask’ Canadian Whisky is made in small batches from grain (rye, malted rye and corn) that has been individually mashed, fermented and distilled. After aging, the whisky is finished with red wine casks from the Wayne Gretzky winery. “

“… I noticed touches of butterscotch with dusty rye and oodles of clean wood spice. There is a hint of cinnamon in the air as well as just a trace of red cherry licorice and a few wisps of vanilla …”

Cocktail Hour: Georgetown Daiquiri

The Diamond Distillery sits at East Bank next to the Demerara River near Georgetown, Guyana. The Distillery is home to Demerara Distillers Limited (DDL), the producers of El Dorado Rum.

Recently I embarked on a cocktail series where I am attempting to produce a signature cocktail for many of the El Dorado Premium Rums which I have enjoyed over the past 10 years. A few weeks ago I published my signature cocktail for the El Dorado 3 Year Old Cask Aged Rum (The Caribbean Queen), and today I am sharing my signature cocktail for the El Dorado 8 Year old Cask Aged Rum. This cocktail combines the complimentary flavours of orange and chocolate with the premium El Dorado Rum. It is named for the City of Georgetown, which lies just to the south of Diamond Distillery.

Georgetown Daiquiri
(Recipe by Arctic Wolf)

2 oz  El Dorado 8 Year Old Rum
1/2 oz  Fresh Orange Juice
1/2 oz  Fresh Lime Juice
3/8 oz  Sugar Syrup (1:1 Ratio)
dash Aztec Chocolate Bitters (Fees Brothers)
Ice
Orange Peel

Add the first 4 ingredients into a metal shaker with ice
Shake vigorously until the outside of your shaker frosts.
Strain into a chilled cocktail glass
Garnish with a strip of Orange Peel zest

Review: CAMUS VSOP Elegance

CAMUS is the last of the major Cognac Houses that is entirely family run, and the House has been that way for five generations. Cyril Camus who represents the fifth generation of the Camus family currently remains in sole control of the company which currently has employees on three separate continents responsible for sales of cognac in almost every country of the world.

The construction of the CAMUS VSOP Elegance begins with a selection of particular aromatic eaux-de-vie which are partially distilled on the lees. These include eaux-de-vie from the famous Borderies cru which are selected to strengthen the aromatic character of the VSOP Elegance as it ages. The aging barrels selected for this VSOP are medium toasted rather than lightly toasted which helps to maintain the original characteristic aromas of the eaux-de-vie.

Champs Élysées

The ages of the varies blended Cognac in the VSOP Elegance must be (by law) a minimum of four years of age, although to maintain a consistent flavour profile from year to year, it would not be unusual for some of the specific Cognac in the blend to be aged longer.

“… The merry little breezes above the glass bring a very nicely fruited mixture of green grape and apricot brandy into the air which are both melded nicely into rising scents of fine oak spice and light butterscotch. There is a gentle floral sweetness in the breezes represented by indications of rose petals, garden lilies and lightly perfumed iris. As the glass sits I sense a light herbaceous quality within the air with impressions of menthol and lemongrass …”

Review: North of 7 Single Barrel Canadian Whisky (Bourbon Style)

Greg Lipin and Jody Miall are both avid rock climbers who regularly travel to Kentucky on climbing trips. It was there that the two friends developed a passion for ‘brown spirits’ which led them to opening their own Micro-distillery ( North of 7 Distillery) in Ottawa, Ontario. They currently produce several styles of Canadian Whisky, their Leatherback Dark Rum (57 % abv.) Triple Beam Gin and Illuminati Vodka.

The subject of this review is the North of 7 Single Barrel Canadian Whisky from Barrel Number 3, which is produced in a boubon style  Corn, wheat, rye and barley grains. The whisky was aged in for about 3 and a half years in 53 gallon oak barrels from Independent Stave Company. This is a true locally produced whisky as all of the grain used by the distillery is sourced locally from the  Moulin St.-Georges Mill (corn from the Alexandria area) and the Against the Grain farm in Winchester.

“… As indicated, the North of 7 Single Barrel Whisky (Bourbon Style) might be a rather polarizing spirit. There is an overt woody quality (a result of maturation in new oak) which some will find disconcerting, while others will relish the fresh oak and cedar flavour. However, once we bring the whisky into the realm of mixology, there is a place for both camps to find enjoyment …”
