#Top100CanadianWhisky #23: J.P. Wiser’s 15 Year Old Canadian Whisky

John Philip (J.P.) Wiser, purchased a distillery in Prescott Ontario in 1857, and began to produce Wiser’s Whisky.  In fact, it may have been J.P. Wiser who first used the term “Canadian Whiskey” on a whisky label when he introduced his spirit to the World at the Chicago’s World Fair in 1893. Today Wiser’s is distilled at the Hiram Walker Distillery in Walkerville, Ontario, and aged in their facilities at Pike Creek near Lakeshore Ontario. Through all of these changes the Wiser’s Brand has been recognized as a vital component of each company’s portfolio of brands.

J.P. Wiser’s 15 Year Old Canadian Whisky (bottled at 40% alcohol by volume) was recently released across Canada.

” … Smooth and yummy with a rich toffee-like flavour of wood and grain spices melded butterscotch and maple. Canned fruit as noted above is joined by light impressions of raisins and a very light cherry-like impression similar to red licorice (Turkish Delight). The vanilla has joined with the orange peel bringing impressions of marmalade. Rich tobacco and new leather with an underpinning of almond syrup …”

#Top100Rums of 2017: #21 Dictador 20 Year Old Solera Rum

Dictador is produced in Colombia on the Caribbean coast at Cartagena de Indias City. Rather than being produced from molasses, the rum is produced from the virgin honey of sugar cane which has been distilled upon a stainless steel alembic, and aged using Dicatador’s unique take on the solera-style aging system. Although the rum is produced upon a stainless steel alembic, the inner workings of this still contain more than enough copper such that it functions in basically the same manner as a copper pot still.

 

The Dictador 20 Year Old Rum, is a solera aged rum which is taken from the solera at the point where the average age of the rum within that solera row is at least 20 years of age.  (Some older rum is certainly within those barrels as well.)

“… I would suggest that oak and caramel dominate the rum, but in spite of the age of the rum, (which is apparent on the nose), the oak flavours do not attack you with sharp tannins and citrus zest. Instead, the oak flavours have melted into the caramel-like flavours and appear to the palate as a yummy oak and caramel syrup that carries hints of other the flavours within it …”

#Top100CanadianWhisky #24: Masterson’s 12-Year-Old Straight Wheat Whiskey

Masterson’s Straight Wheat Whiskey is distilled and aged in Canada, for a California company located in Sonoma, called 35 Maple Street. As a straight whiskey, the spirit must be barreled and aged in new American Oak; however this Masterson’s whiskey also holds the distinction of being perhaps the only Canadian whiskey which is distilled on a copper pot still from a mash of 100 % wheat grain. It is aged for 12 years, bottled at 50% alcohol by volume, and is apparently (like the rest of the Masterson’s line-up) named for the famous frontier lawman, William “Bat” Masterson.

Review: Masterson’s 12-Year-Old Straight Wheat Whiskey

Although there is an omnipresent flavour of fresh wood and spice which permeates the Masterson’s Straight Wheat Whisky, these oak flavours do not grow to such an extent that they dominate the other flavour nuances within the spirit. The whisky brings forward a subtle sweetness of yummy butterscotch flavours and oodles of dusty rye-like wheat spices which are melded into the oak character.

#Top100Rums of 2017: #22 El Dorado Grand Special Reserve

Last year El Dorado Rum announced the release of a new special edition rum which celebratesd the 50th Year Anniversary of Guyana’s Independence from Britain. This Anniversary Rum is produced from a blend of rums aged 33 to 50 years, and finished with a soupcon of aged pot still rums surviving from El Dorado’s heritage Double Wooden Pot Still and a since-discontinued John Dore Copper Kettle Still.

The completed rum is bottled at 43 % alcohol by volume and presented in a distinctive crystal decanter adorned by an 18 carat gold collectible medallion. Only 600 bottles were produced, each individually signed and numbered by the El Dorado Master Blender.

“… The initial aroma is rich and intimidating with dark caramel and treacle aromas rising laced with the smells of oak sap, tar-like asphalt and gluey resin. Wisps of dry fruit (raisins and dates) and hints of licorice and menthol mingle within as do a impressions of vanilla, dark brown sugar, and cinnamon. As the glass sits the complexity builds with damp cigar tobacco, espresso coffee and sweetened canned fruit (peaches and apricots) …”

#Top100CanadianWhisky #25: J.P. Wiser’s Union 52

And now for something different ….

J.P. Wiser’s Union 52 Canadian Whisky is a blend of mature 16-year-old Canadian whiskies with an extremely old single malt whisky that was distilled in the Highlands of Scotland. (Eighteen barrels of this whisky had been stored and aged at one of the J.P. Wiser’s warehouses in Canada since 1964. Apparently, if you go poking around in the aging warehouses in Canada, you can find all manner of strange spirits lurking around.)

Dr. Don Livermore (J.P. Wiser’s Master Blender) is apparently the creative mind behind who developed Union 52. The results of his experimentation yielded a whisky blend which consisted of 52 year-old single malt spirit (4 % of the total blend) and 16 year-old Canadian spirit (96% of the total blend).

Review: J.P. Wiser’s Union 52 Canadian Whisky

The dominant flavours of the whisky are oak, vanilla, caramel, baking spices (cloves and cinnamon) and dark fruit (dates and figs) with hints of peat. I also taste black licorice, toasted walnut, and an herbal component which brings forward green sawgrass, willow and hints of menthol.
