Howling Highlight: Legendario Rum Cake

This is the month of Jolly Ol’ St. Nick.  And believe it or not Fine Spirits and Christmas have a tradition of togetherness which cannot be denied.  Rum cakes and Eggnog immediately come to mind.

Speaking of Rum cakes I found a great recipe at  Amazing Christmas Ideas.

Although their recipe is great, I like my own Legendario Rum Cake which I bake two weeks before Christmas:

Legendario Rum Cake

1/3 cup softened butter
1/3 cup brown sugar
1/3 cup white sugar
2    eggs
2/3     cup flour
1/2 teaspoon baking powder
dash cinnamon
dash nutmeg
sprinkle of salt
1/2 teaspoon Vanilla Extract
1 1/2 0z  Legendario rum.
1 1/3   cups chopped pecans and walnuts mixed

Mix the first 11 ingredients together and stir until everything is well moistened
Stir in the walnuts and pecans
Pour into a well greased 6 inch round casserole dish
Bake at 325° about 55 minutes.

Leave the cake in the casserole dish and drizzle 1 oz rum over the cake.
Seal the casserole dish with plastic wrap.
Once per week drizzle 1/2 oz of rum over the cake and reseal it.
Microwave and serve on Christmas eve

I love to pour a rich chocolate sauce over the hot pieces of cake when I serve it.

Rum Review: Pampero Seleccion 1938

The country of Venezuela produces some fantastic rum.  I have already reviewed the Santa Theresa 1796 from Venezuela, as well I have  featured the Venezuelan Diplomatico Rums in one of my first Howling Highlights. There is a third famous rum family from Venezuela, The Pampero Rum family.

A few weeks ago I gave you my first impressions of Pampero Seleccion 1938 when  I found what I believe was one of the last bottles for sale in Edmonton.  Now I cannot find the rum anywhere in the Province, and sadly it seems the entire family of Pampero rums will be absent from Alberta shelves this winter.

Fortunately for my readers I did find one bottle, and now I have completed five separate tasting for this rum and also experimented with a few cocktails.  You can read the results of this hard labour here:

Rum Review: Juan Santos Gran Reserva (12 Year)

We have come to the fourth review on a series of new Colombian rums entering the Canadian marketplace. The Juan Santos 12 year old rum brings an increased level of smoothness and depth to the rum glass, and it was truly a pleasure to review the sample which was provided for me by the rum’s Canadian importer, The Liber group.

Rum Review: Ron Matusalem Platino

On October 21, 2009 I first began to taste the Ron Matusalem Platino Rum  I found the rum to be shy and subdued with a mild pleasant, but extremely laid back flavour.  I have visited this bottle several times since then and have now completed my full review.

Ron Matusalem PlatinoThe Ron Matusalem company has a fascinating history dating back to 1872, when the brand was established by Benjamin and Eduardo Camp and Evaristo Alvarez.  A marriage between Evaristo Álvarez daughter, and the son of Eduardo Camp, at the turn of the next century begat a family tradition of the original founders that has through five generations controlled the company.   The family fled Cuba in the 1960s and reestablish the company on U.S. soil in the state of Florida.  The reestablished company produces their Cuban style rum which is now blended in the Dominican Republic.

Rum Review: Highwood Imported White Rum

Highwood Distillers are from my home province in Alberta Canada. Obviously with no locally grown sugar cane in my province, this rum must be imported. A quick check of the bottle only indicates that the rum originates from a blend of fine rums from the Caribbean. A description which does not really tell me much as to my knowledge all imported rum in Canada originate in the Caribbean.

High WoodWhen I talked to a Highwood representative, at the recent Rocky Mountain Food and Wine Festival in Edmonton, I mentioned that the their White Rum tasted  like it was from Guyana to me.  He confirmed that the blend was indeed predominantly a demerara blend. I forgot to ask him whether this was always the case with Highwood rums, a question I must remember the next time we speak.

Now this is a local brand, only available in western Canada, but I decided that reviewing a local product would not be a bad idea.  So without further introduction, let me present Highwood Imported White Rum:
