#49 Rum of 2017: El Dorado 3 Year Cask Aged Rum (#Top100Rums)

The Diamond Distillery sits on the East Bank of the Demerara River near Georgetown, Guyana. The Distillery, originally attached to the now closed Diamond Sugar Estate, is home to Demerara Distillers Limited (DDL).

The El Dorado 3 Year Cask Aged Demerara Rum is blended from aged stocks (the youngest being no less than 3 years old) and then filtered twice through charcoal filters to produce a clear rum. All of the Demerara Rum produced by El Dorado is aged exclusively in American oak (45 gallon bourbon barrels).

“… The rum has a pleasant soft texture with light oil-like mouth-feel. There is no bitterness, and the soft butterscotch/caramel flavours remain firm through the palate accented with light minty candy-like flavours. There is also a light spiciness which hints at citrus zest and banana peel. As I sip I also begin to sense very light undercurrents of dry fruit, chocolate and a light but firm impression of baked coconut …”

Summer Cocktail #5 – The Daiquiri

Simple Daiquiri

Today (in the USA) is National Rum Day, and I cannot think of a better way to toast the cane spirit than with the quintessential rum cocktail, the Daiquiri. Like that other quintessential rum cocktail, (the Cuba Libre’), the mixed drink appears to have originated in Cuba and was given its present name shortly after the Spanish-American War ended in 1898.

Let me share a recipe for the most basic form of the cocktail.

A Simple Daiquiri

1 1/2 oz. Light Rum
1/2 oz. Fresh Squeezed Lime Juice
1 tsp. Sugar Syrup (1:1 ratio)
Ice
Slice of Lime for Garnish

Combine the first three ingredients into a metal shaker with ice.
Shake until the metal shaker chills.
Strain into a chilled  glass.
Garnish with the lime slice

It is probably true that this classic cocktail was being served in Cuba and perhaps elsewhere in the Caribbean (in one form or another) for many years already; but the libation appears to have been given its popular name when an American mining engineer working in Cuba, named Jennings Cox ran out of gin while entertaining his friends. He switched over to the local rum, mixed it over ice with Lemon Juice and Sugar, and named his new-found drink, the Daiquiri. Incidentally, this was also the name of a beach nearby and an iron mine near Santiago de Cuba. (We don’t know whether it was the beach or the iron mine which served as the inspiration for the cocktail’s name.)

The new name for the drink caught on and was apparently brought over to America by US Navel OfficerRear Admiral Lucius W. Johnson, who enjoyed the libation while serving in Cuba in 1909. When back in America he introduced it to the bar in Army and Navy Club in Washington, D.C.. The Daiquiri (once introduced to American bartenders) slowly spread across the USA and beyond.

Today (as shown in the recipe above) Lime Juice has supplanted Lemon Juice as the main citrus component, although many variations exist with substitutions (or additions) of other citrus and fruit juices and even flavoured liqueurs.

My own 11 A.M. Daiquiri

Last year (while sampling and reviewing Captain Morgan White Rum), I constructed this variation which I call the 11 A.M. Daiquiri.

11 A.M. Daiquiri

2 1/2 oz Captain Morgan White Rum
3/4 oz Lemon Juice
3/4 oz Orange Juice
3/8 oz Sugar Syrup (1:1)
Ice
Lemon Slice

Add the ingredients into a metal shaker with ice
Shake until the outside of the shaker begins to frost
Pour into a crushed ice-filled hurricane glass
Garnish with orange and cherry.

Review: Merchant Shipping Co. White Rum

Merchant Daiquiri

Merchant Shipping Co. White Rum is a ‘destination’ brand exclusive to Liquor Depot and Wine & Beyond stores in Western Canada, bottled by Highwood Distillers who are located in High River, Alberta (about 40 Kilometers south of Calgary).

The back label of the bottle states that the rum is imported from the Caribbean; however when I did a bit of digging on the Alberta Gaming and Liquor Control (AGLC) website I found they listed the rum as Guyanese in origin. This makes sense as Highwood Distillers have mentioned to me in the past that their rum was sourced from Guyana; however I could find no confirmation of this fact so perhaps we should take this information with a grain of salt.

“… I taste a light butterscotch, mushy banana and very mild mint-like menthol. Subtle vanilla notes are present, as is that light pot still influence which give the rum some unexpected character. Hints of orange peel add a touch of spiciness to the spirit …”

Rum Howler 2016 Top 50 Mixing Rums Countdown #5: Brugal Titanium

Over the next one hundred and twenty years the company grew steadily, and it is now one of three large Rum Distillers in the Dominican Republic. The original family which founded Brugal is still in the control. George Arzeno Brugal, is the current chairman, and most of the board members are direct descendants of the original company founder. In fact, the Brugal Distillery has become an institution in the Dominican Republic.

SAM_0972 Brugal TitaniumJust about every friend of mine who has visited this the Dominican Republic has a vivid tale to tell of their amazing bus ride to the distillery, and another tale to tell of how much fun it was to sample the Brugal Rum. Brugal Titanium Rum is a triple distilled premium white rum produced primarily for the domestic market (and in parts of Europe) as a high-end cocktail spirit meant to compete with ultra premium Vodka.

Again I find the Titanium spirit implies the refinement of a great vodka; yet it also carries the charm (and flavour) of quality white rum …”

Rum Howler 2016 Top 50 Mixing Rums Countdown #7: Harbour Rum (Yongehurst Distillery)

2016rum_howler_badgeThe Yongehurst Distillery is a brand new Micro-Distillery located at 346 Westmoreland Ave near Dupont and Dovercourt in Toronto, Ontario. The facility is owned by long-time friends, Rocco Panacci and John-Paul Sacco who are making what just might be Toronto’s first micro-distilled rum upon their brand new small pot/column combination still.

In fact when I reviewed it earlier this year, I was blown away by the rich Jamaican-like pot still flavours which permeated both the aroma and the flavour. This rum that Yongehurst is producing is unique  as it is one of the first micro distilled rum produced entirely in Canada, and it is perhaps the first rum produced in Canada which is completely unaged.

“… The flavours from the nose translate well to the palate with hints of cotton candy and mint playing in the rum alongside flavours of banana and citrus zest. A light herbaceousness is present with lemongrass and hints of heather manifesting themselves from the grassy aromas I noted earlier. Of course I wanted to try a few cocktails and working with that mint-like flavour I could sense both on the nose and in the mouth I started with a very short mojito-like cocktail. The result was well worth the effort and I was emboldened to try another serving in the daiquiri style …”
