Review: Pierre Ferrand Ambre

Pierre Ferrand Ambre Cognac is blended solely from aged eaux de vie produced within the 1st Cru de Cognac, specifically from the Ugni Blanc and Colombard grapes grown within the Grande Champagne Cognac appellation (region) of France. Although the final spirit has no age statement, according to Cognac Ferrand, this is because the spirit is blended to meet an age profile that represents a 10-year-old spirit. To maintain product consistency from year to year, the actual average age of the blended cognac will vary depending upon the cellar conditions during maturation and the interactions between the oak and the aging eaux de vie.

Pierre Ferrand uses only small (25 – hectoliter) copper pot stills to produce their Cognac; and after distillation, the resulting distillate (eaux de vie) is matured in small 270-liter French Limousin oak barrels. During this aging process, the cognac may rest in any of seven different aging cellars (each with traditional earthen floors). Within each of these cellars, the spirit is monitored, and may be transferred several times during its aging life to different cellars and/or to different oak casks (with differing char levels) to maintain the integrity and character of the spirit.

“… I discovered the Pierre Ferrand Ambre has a wonderful freshness featuring both floral and citrus elements which reached out of that glass and teased my nostrils. Mixed into those breezes are firm impressions ripe green grapes and a gentle sweep of vanilla. I also sense an herbal grassy note, as well as a few wisps of spicy raisins, and a mild winding of sandalwood and oak …”

#Top100Rums of 2017: #15 Plantation Jamaica (2002) Vintage Edition

Cognac Ferrand has long had a special relationship with a variety of Caribbean rum producers which is based upon the rum producer’s need for quality oak casks to age their rum. Based upon this relationship, Cognac Ferrand is able to acquire certain old and unique batches of rum from various Caribbean sources, which they bring back to France and finish in their own warehouses and of course their own Cognac Casks.

Plantation Jamaica (2002) Vintage Edition was first aged in bourbon casks in tropical Jamaica after which it was transported to the Chateau de Bonbonnet in France, where it was aged for 3 more years in used 350 litre Pierre Ferrand Cognac casks to enhance the rum before it was bottled as part of Cognac Ferrand’s growing line-up of Vintage Plantation Rums.

Review: Pierre Ferrand 1840 Original Formula Cognac

Cognac Ferrand is the result of a rare opportunity offered to a young man (Alexandre Gabriel) in 1989 by one of the oldest wine growing families in the Cognac region of France. According to Mr. Gabriel:

” I met a small Cognac producer who needed help selling his products to finish off his stock. This was Cognac Ferrand. I fell in love with the product and with the region. It all reminded me of what I grew up around. So when I was invited to become a partner and told that no one was going to continue if I didn’t, I just said….yes.”

Although that beginning may have seemed rather precarious to those on the outside, Alexandre Gabriel plunged headlong into the task of rebuilding what he described to me as:

“A run down business with no distribution network, with no real sales, good stocks but no organized production”

Alexandre Gabriel made the most of his opportunity, and now that run down business with no distribution network is s a well-respected producer with sales in more than 40 countries world-wide.

For Pierre Ferrand 1840 Original Formula Cognac, Mr. Gabriel collected old bottles of cognac that were bottled at a young age and designed his Cognac based upon a particular bottle from 1840 thus replicating a style of cognac which had heretofore been lost to time.

“… I received enticing aromas of wood spices which gave me impressions of freshly sanded oak and sandalwood. Hints of cinnamon stained the oak spices; butterscotch and honey gave the breezes a hint of sweetness; and a fruity citrus zest  contributed to an effervescent quality which was apparent in the air …”

Because, some of my friends believe it is sacrilegious to mix brandy or cognac in bar drinks and cocktails, I decided to call my recommended cocktail which features both the 1840 Cognac and a well aged brandy, the Heretic. (And for the record, it is a thoroughly delicious cocktail!)

Review: Plantation Original Dark 73 % Overproof Rum

SAM_0340 Zombie PlantationCognac Ferrand has long a history of providing Cognac Casks to various Caribbean rum producers based upon the rum producer’s need for quality oak casks to age their rum. Because of this long history Cognac Ferrand has over time developed solid relationships with many of these producers. Based upon these relationships they have been able to acquire certain unique batches of rum from various Caribbean sources. Typically these rums are brought back to France to be finished in their own warehouses and of course in their own Cognac Casks.

The Plantation Original Dark 73 % Overproof Rum  is Cognac Ferrand’s ‘tiki style’ overproof rum. The base rum is a column distilled rum from Trinidad which was aged in oak barrels in Trinidad before being transported to France.

“… Within this rich aroma I can smell a strong butterscotch/caramel toffee which seems to rise up in waves out of the glass. Banana peel, marmalade and marzipan appear as well in a bouquet that despite the astringency is very inviting. Rounding out the nose are some very nice baking spices (vanilla, cinnamon, and brown sugar) which build up and remind me of my Mom’s cinnamon buns baking in the oven …”

Top 10 White Rums Countdown # 3 – Plantation 3 Stars Silver Rum

op10RUM 550Plantation 3 Stars Silver Rum is relatively new white cocktail rum from Cognac Ferrand ( see Plantation Rum Website). In producing this rum Alexandre Gabriel (President and Owner, of Cognac Ferrand) blends rum from three different Caribbean Islands in order to achieve the correct balance between flavour and character suitable for a cocktail rum bearing the Plantation name. These three Islands (Barbados, Jamaica, and Trinidad) are considered by the folks at Cognac Ferrand to be the three “star” producers of the Caribbean, hence the name “Plantation 3 Stars” was chosen for the rum.

A great deal of time was spent by the Cognac Ferrand team tweaking the rum to get it just right. Even the exact bottling proof was examined thoroughly. According to Alexandre Gabriel:

plantation-3stars-b“I was dreaming about this rum and could mentally taste it before it was done so we worked relentlessly until we were there. We wanted character and personality but didn’t want it too heavy taking away from our purpose which was to have a balanced and elegant rum exceptional for cocktails. We found the perfect balance at 41.2% alcohol by volume.”

I guess the opinion of my friends and I is that Cognac Ferrand did indeed get it right, as this spirit was declared the Number 3 Rum in my Rum Howler Countdown of the Best White Rums in the World (that I have tasted)!

“… The breezes above the glass display a very obvious scent of hard candy where orange and lemon drops mix with tropical fruits like mango and soft banana. There is even a few lightly minty notes of Christmas candy-cane and a light butterscotch/caramel impression in the air. As you let the glass breathe you begin to notice a vague astringency or roughness in the air as well …”
