Arctic Wolf’s Christmas Eggnog

I like eggnog at Christmas, and so for the third year in a row I am going to post my favourite recipe for Christmas Eggnog.

This is a simple recipe in terms of ingredients, but it requires a bit of a baker’s touch get it just right. I switched up the Rum and the Whisky in the recipe from last year and found it to be as good as ever.

Arctic Wolf’s Christmas Eggnog
(This makes about four servings. )

3 eggs at room temperature, (yolk and whites separated)
3/8 cup sugar (for the yolks)
3 tablespoons sugar (for the whites)
1/4 teaspoon vanilla
a touch fresh ground cloves (About 1/16 of a teaspoon)
a pinch of fresh grated nutmeg (About 1/8 of a teaspoon)
a dash of fresh ground cinnamon (About 3 /16 of a teaspoon)
1 1/2 cups whipping cream, chilled
1 cup whole milk
1/2 cup Spiced Rum (George Street Spiced)
2/3 cup Bourbon Whiskey (Knob Creek)

Here is how to make it:

First the yolks

Separate your egg yolks and your egg whites in two bowls. Whisk the first amount of sugar and the vanilla into the egg yolks. Add a touch of  ground cloves, a pinch of nutmeg and a dash of cinnamon into the yolk bowl. Add the cream, the milk and the rum and whisky (for adult consumption only). Make sure everything is mixed thoroughly.

Now the whites

This is where a baker’s touch is necessary.
Beat the egg whites until they form soft peaks (3-4 minutes). Add the second amount of sugar slowly during this beating process.

Now we combine

Gently and with large circular motions blend the egg white mixture into the yolk mixture, trying to keep things as ‘poofy’ as possible.

Sprinkle a little left over spice on the top of each glass, and enjoy with your favourite chocolates!

Review: Glen Garioch 12 Year Old Single Malt

The Glen Garioch Distillery (pronounced ‘Glen Geery’) is located in the town of Oldmeldrum, approximately 20 minutes from Aberdeen. It is the Eastern-most distillery in Scotland, in the Valley of Garioch, which is apparently one of the best barley growing regions of Scotland. The distillery was established in 1797.

The Glen Garioch 12 Year Old is a Highland malt which has been blended from stocks of two types of oak cask groups. Spanish Sherry casks are utilized to provide a strong depth of flavour, and American Bourbon casks are used to soften the finished malt. I recently received a sample bottle of the Glen Garioch 12 Year Old from Shiralli Agencies who are the local importers and distributors of Morrison Bowmore Products. (The Glen Garioch Distillery and its brands are owned by Morrison Bowmore.)

Here is an excerpt from my review:

“… If I close my eyes and sniff the breezes above the glass I can imagine I am in a grassy meadow with bits of heather and sweet-grass growing amongst the other grasses. Clumps of willow lie at the edges of the meadow, and over the nearby hill a few pine trees are sending faint scents into those breezes. I am enjoying the aroma from the glass; Although it is sweet and spicy, it is also laid back and relaxing…”

Review: Glenfarclas 12 Year Old Highland Malt

The Glenfarclas Distillery is located on the Recherlich Farm, at Ballindalloch, in the heart of Speyside. The Distillery was purchased by the Grant Family in 1865 for a total sum of £511.19sd. It has remained in the control of the Grant Family for six generations up to the present day. In fact, Glenfarclas is one of only a few distilleries remaining in Scotland which is independently family owned and managed.

The Glenfarclas Single Malt Whisky line-up includes the Glenfarclas 10 Year Old, the Glenfarclas 12 Year Old, the Glenfarclas 15 Years Old, the Glenfarclas 21 Years Old, the Glenfarclas 25 Years Old, the Glenfarclas 30 Years Old and the Glenfarclas ‘105’ Cask Strength. I was provided with a sample of the Glenfarclas 12 Year Old by Pacific Wine & Spirits Inc. who is the importer/distributor of Glenfarclas Highland Single Malt Whisky in Alberta.

Here is an excerpt from my review:

“… The initial nose from the glass is full of floral oak spice with obvious honey and marzipan notes rising up as well. If I close my eyes and allow the glass to breathe, I can imagine that I am surrounded by saw grass in a lowland meadow. Some heather and lavender grows in small clumps nearby, and a few pine trees lie on the edge of my sensory range. These scents and smells from the glass are clean and pleasant….”

Although I found the Glenfarclas 12 Year Old Single Malt to be an outstanding whisky for sipping, it is also such an approachable spirit, that I could not resist constructing at least one cocktail recipe,  Soft Touch for your enjoyment as well.

Review: Wiser’s Legacy Canadian Whisky

On November 11, 2009 I published my review of Wiser’s Red Letter Whisky. I was very pleasantly surprised to receive an email the very next day from  Corbys Distillers (Canadian Office). Apparently my review had been noticed, and they were interested if I maybe would like to receive a lab sample of a new whisky,  Wiser’s Legacy.

Of course the answer was yes. This is something that every reviewer wants, a chance to test his or her palate on a new spirit with very little information in the public realm to pollute the tasting notes. No other information was sought or obtained by myself. The review was as clean as a review could get and I posted it almost two years ago as a First Impression review (I lacked any information on the bottle presentation which is included in all my full reviews).

It took nearly two years for me to receive a picture of the final bottle (J-peg) so that I could properly move the review from the First Impressions area of my website to my Canadian Whisky reviews section of the website.

Here is an excerpt from my finalized review:

“…Thick oil coats the throat with an oak and spice explosion.  The exit leaves the mouth puckered somewhat from the dry woodiness, and the throat is assaulted by spices which grow hotter in the throat than they were in the mouth. At the end of the finish, typical Canadian rye flavours  finally appear en masse  to battle the youthful oak down the throat.  The overall impression is that something awesome just might have happened in my throat, but it is hard to describe exactly what it was…”

Review: Proof Whisky

Proof Whisky is a relatively new brand of Canadian Whisky produced by Proof Brands. The company currently produces whisky, rum and vodka all of which are bottled in unique stubby 500 ml bottles. The brand and the spirits are the creation of Michael Riley, at ten-year veteran of the alcohol beverage industry. Michael spent 5 years as the Director of Spirits for the LCBO (Liquor Control Board of Ontario). He has also has worked with such brands as Crown Royal, Absolut, Captain Morgan, Chivas Regal and Molson Canadian.

According to the press information I was given, in Whisky Magazine’s 2011 World Whisky Awards, Proof Whisky was apparently on the short list for the best Canadian Whisky in the world.

Proof Whisky is a double grain whisky produced from wheat and rye bottled at 42% alcohol by volume in the signature stubby 500 ml bottle. And it is with this bottle that I shall begin my review. Here is an excerpt:

“…The aroma from the glass is very unusual. Balsam and saffron lead out with lemon quickly following. I sense fresh green bell-peppers, sandalwood, and some astringent citrus zest rising up into the breezes…”
