The Diamond Distillery sits on the East Bank of the Demerara River near Georgetown, Guyana. The Distillery, originally attached to the now closed Diamond Sugar Estate, is home to Demerara Distillers Limited (DDL).
The El Dorado 3 Year Cask Aged Demerara Rum is blended from aged stocks (the youngest being no less than 3 years old) and then filtered twice through charcoal filters to produce a clear rum. All of the Demerara Rum produced by El Dorado is aged exclusively in American oak (45 gallon bourbon barrels).

Collingwood Toasted Maplewood Finish
Note: As indicated earlier, I will not be creating a posting for every whisky in my countdown on this website; but I am going to try to highlight every Canadian spirit that I have not reviewed previously.
In 1862, Facundo Bacardi and his brother José bought the Santiago de Cuba Distillery and began to distill what would become the most popular commercial rum in the world. Using a method of charcoal filtering, and oak barrel aging along with a still of copper and cast iron, Facundo Bacardi created a smoother more refined version of the locally made rum. His smoother version of the spirit became local favourite, and over time, an international sensation. Of course, Bacardi Rum is not made in Cuba anymore, the
Hine is one of the oldest Cognac Houses in the commune of Jarnac, (within the Cognac appellation of France of course), and Hine has produced their Cognac since 1763. Hine Bonneuil 2006 is a Vintage Cognac produced from grapes of a single harvest from the Grande Champagne Cru. The spirit was drawn from 19 individual casks each limited to 450 bottles. (The release is named for Bonneuil Village where Domaines Hine’s Grande Champagne estate is located.)
Kirk and Sweeney 12 Year Rum is crafted in the Dominica for a company from Sonoma California called 35 Maple Street, which is the spirits division of The Other Guys (TOG). TOG is wine company led by August Sebastiani, a member of one of California’s oldest wine families. The Sabastiani family has been involved in the Californian wine industry since August’s great-grandfather, Samuele Sebastiani, opened his family run winery over 100 years ago.
